Concordia College Culinary Supervisor in Moorhead, Minnesota

Job Summary/Basic Function The primary responsibility of this position is to assist the Lead Culinary Supervisor in providing culinary supervision, training, and menu and recipe development in all areas of Dining Services. Assist in daily food preparation, production, and presentation. 1. Support the mission and vision of Concordia College and demonstrate the competencies as defined for this position. 2. Food production Oversee and assist with food preparation, production, and presentation for residential dining, contract services, catering, retail operations, and other events. Utilize standardized recipes to ensure the highest standards in product quality including appearance, consistency, and taste. Maintain cost awareness and minimize waste. Maintain production records. Maintain and enforce standards of sanitation and safety as established by local, state, and federal health authorities. Maintain equipment and work areas in neat, clean, and safe condition. 65% 3. Supervision of culinary staff Support and develop culinary team through hands-on assistance and training, education, and evaluation. Assist with preparation of work schedules in accordance with production needs. Participate in weekly production meetings. 15% 4. Menu and recipe development Test and create new recipes that meet departmental parameters and goal. Taste test food for quality and flavor. Adjust current recipes. Assist with development of new recipes and menu concepts. Apply creativity to menus and presentation. 10% 5. Perform food service supervisory responsibilities Supervise unit operations and employees while Supervisor on Duty. Participate in management/supervisory meetings. Assist with long range departmental planning. Assist with research and selection of food service equipment and facilities planning. Represent the college in a professional manner with particular attention to the Dining Services cultural norms.
