Job Summary
The Chef Manager is responsible for overseeing all culinary operations within a designated dining location, including menu planning, recipe development, food preparation, staff management, and ensuring the highest quality of food and service are delivered consistently, while adhering to Epicurean's standards and maintaining a strong focus on profitability and guest satisfaction; essentially acting as the culinary leader of the kitchen, balancing creative culinary vision with operational efficiency.
Key Responsibilities:
Menu Development and Execution:
Create and maintain innovative, seasonal menus that align with Epicurean's brand identity and guest expectations.
Develop recipes, standardized portioning, and costing for all menu items.
Conduct taste tests and refine dishes to ensure optimal quality and presentation.
Kitchen Management:
Lead and supervise a team of cooks, ensuring proper training, task delegation, and performance evaluations.
Monitor food inventory, order supplies, and manage food costs to maintain profitability.
Oversee kitchen operations to maintain cleanliness, sanitation, and adherence to food safety regulations.
Staff Development:
Train and mentor culinary staff on cooking techniques, menu items, and Epicurean standards.
Identify opportunities for staff development and provide necessary training to elevate culinary skills.
Foster a positive and collaborative kitchen environment.
Guest Interaction:
Collaborate with the dining room staff to ensure seamless communication and guest satisfaction.
Address any guest concerns regarding food quality or service.
May participate in special events or guest dining experiences.
Financial Oversight:
Monitor and manage kitchen budget, including food costs, labor expenses, and operational costs.
Implement cost-saving measures when necessary, while maintaining quality standards.
Required Skills and Qualifications:
Proven experience as a Chef Manager in a high-volume, upscale dining environment.
Strong culinary skills with expertise in various cooking techniques and cuisines.
Excellent leadership and team management abilities
Deep understanding of food safety and sanitation protocols
Ability to manage budgets and maintain profitability
Excellent communication and interpersonal skills
Passion for food and a commitment to delivering exceptional dining experiences
