Position Overview: We are looking for a talented and passionate Demi Chef de Partie with expertise in Sushi to join our culinary team. The ideal candidate will have a strong background in Japanese cuisine, particularly in the art of sushi making. As a Demi Chef de Partie (Sushi), you will work closely with our culinary team to create exceptional sushi dishes that exceed our guests' expectations, contributing to our resort’s reputation for outstanding dining experiences.

Key Responsibilities:

  • Prepare and present high-quality sushi dishes, ensuring that all food served meets the resort's standards of excellence.
  • Assist in the development and creation of new sushi menu items, incorporating fresh, local ingredients.
  • Maintain cleanliness and organization of the sushi preparation area, ensuring adherence to all health and safety regulations.
  • Collaborate with the Executive Chef and other culinary team members to ensure a seamless kitchen operation.
  • Monitor inventory levels, ensuring that all sushi ingredients are fresh and available as needed.
  • Provide guidance and training to junior chefs, fostering a culture of continuous learning and improvement.
  • Uphold the Waldorf Astoria brand’s commitment to luxury and quality in every dish.

Qualifications:

  • Minimum of 2 years of experience as a Sushi Chef or similar role in a luxury hotel or high-end restaurant.
  • Expertise in sushi preparation, including knowledge of traditional techniques and modern trends.
  • Strong knife skills and attention to detail.
  • Ability to work efficiently under pressure in a fast-paced environment.
  • Passion for Japanese cuisine and a dedication to creating memorable dining experiences.
  • Excellent communication and teamwork skills.
  • Willingness to adapt and learn new culinary techniques and skills.
