Job Summary

Plans, prepares, cooks, and packages meals for the Meals and Wheels delivery / take out service and serves meals in a congregate setting to elder KIC program participants in the cafeteria. Maintain a friendly and professional demeanor towards supervisor, coworkers, trainees, and customers. Performs other job related duties as assigned by supervisor.

Maintains safety, sanitation, and cleanliness of the Elder Program Facility. Duties are carried out within established guidelines and policies under the general supervision of the Elder Care Coordinator.

ESSENTIAL JOB FUNCTIONS

Follows the food preparation and cooking methods, portion sizes, sauce mixing, and food garnishing to ensure food is prepared in prescribed manner by the Head Line Cook in compliance with Federal and State Regulations. Test cooked foods by taste and smell. Maintains solid knowledge of all food products and is able to skillfully apply culinary techniques.

Prepares all menu items following recipes and yield guide as prescribed by Head Line Cook. Rotates all products on a first-in, first-out philosophy. Minimizes waste and maintains controls to attain forecasted food cost to ensure kitchen efficiency.

Ensures foods are stored and kept at proper holding temperatures, through the use of thermometers. Properly labels and dates all products to meet food safeguard sanitation. Maintains equipment to certify serve-safe conditions. Maintains proper storage procedures as specified by Health Department requirements.

Maintains kitchen cleanliness by complying with occupational, health and safety standards:

  • Monitors and maintain cleanliness, sanitation and organization of assigned work areas:

  • Transports empty, dirty pots and pans to the pot wash station;

  • Operate dish machines;

  • Disinfects and sanitizes cutting boards and worktables;

  • Remove washed dinnerware, flatware, and glassware from automatic dishwasher and stacks them according to size and likeness for future use;

  • Returns items not satisfactorily cleaned for a second wash;

  • Sweep and mops kitchen floors;

  • Scrubs walls and trashcans;

  • Picks up trash in kitchen and loading dock area;

  • Cleans floor mats.

Physical Activities

Must be able to hear. Specific vision abilities include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Ability to use hands to finger, handle or operate objects tools, or controls; reach with hands and arms; climb or balance; stoop, kneel, crouch; and taste or smell. Each of the listed activities also requires standing, sitting, walking, bending, and stooping, climbing on stools and ladders, and routinely lifting and carrying items and boxes up to fifty (50) pounds without restriction.

Must possess physical ability to access all areas of the work facility. Physical stamina and proper mental attitude to work under pressure, indoors, and in exposure to hot/cold surfaces, steam and wet floors.

Working Conditions

The environment involves the usual risks and stress of a public service facility. The employee may be exposed to communicable diseases. Safety precautions for employees such as blood drawing for screening of various diseases such as hepatitis, required immunizations, etc. are necessary. The employee is occasionally subject to verbal abuse, threats, and physical violence from angry, hostile, or disgruntled customer and/or family members.

QUALIFICATIONS

Special Requirements

Incumbent must be able to demonstrate he / she has no history of domestic violence or crimes against a person for at least three years prior to applying. Must be free of prior felony convictions for crimes against a person. Must be free from convictions involving a controlled substance as defined in AS 11.71.900, under federal law or under any other state’s law, misdemeanor assault, a crime involving domestic violence, or the violation of a municipal ordinance or law from another jurisdiction having elements similar to the offenses specified in this paragraph within three years.

Licensure

Possess or ability to obtain a valid Health Card. Must obtain CPR/First Aid Certification within 90 days of hire.

Possess current valid State of Alaska driver's license with a record acceptable to KIC’s Insurance carrier.

Education

High school diploma or equivalent required.

Experience

Two years’ experience in menu planning, meal preparation, recipe standardization, and quantity food service is highly desirable.
