Jumeirah Zabeel Saray is a luxurious beachside resort located on the west crescent of the iconic Palm Jumeirah in Dubai. The interior of the resort is inspired by the ancient palaces of Turkey and features hand-painted finishing’s, Turkish artworks and stunning murals inspired by the Golden Age of the Ottoman Empire.

The resort offers 405 rooms and suites, 38 Royal Residences and the award-winning Talise Ottoman Spa, one of the largest and most luxurious spas in the Middle East. The resort offers Sinbad’s Kids Club complete with splash park, performing art destination Zabeel Theatre and a collection of diverse restaurants which offer a vibrant selection of culinary experiences. About the Job:

An exciting opportunity has arisen for an experienced Head Sommelier to join the F&B team in Jumeirah Zabeel Saray .

The main duties and responsibilities of this role are:

  • Selecting and updating the wine list, ensuring a diverse and balanced selection that complements the menu.

  • Sourcing and purchasing wines, maintaining relationships with suppliers, and negotiating pricing.

  • Monitoring wine stock levels, conducting regular inventories, and ensuring proper storage conditions.

  • Educating and training restaurant and bar staff on wine knowledge, service techniques, and proper wine etiquette.

  • Overseeing the wine service in the restaurant and other outlets, ensuring consistency and quality.

  • Planning and conducting wine tastings, wine dinners, and other events to promote the wine program.

  • Monitoring costs, reducing waste, and optimizing pricing strategies.

  • Ensuring compliance with all relevant laws and regulations, including licensing and health and safety standards.

  • Ensuring the wine cellar is organized, clean, and properly maintained.

  • Keeping up-to-date with industry trends, new wine releases, and market developments.

About You:

The ideal candidate for this position will have the following experience and qualifications:

  • A degree in hospitality management, culinary arts, or a related field

  • Diploma in Advanced Sommelier or Master Sommelier (CMS) or WSET.

  • Certification from the Court of Master Sommeliers (CMS), Wine & Spirit Education Trust (WSET), or similar organizations.

  • Deep understanding of wine regions, varietals, tasting techniques, food and wine pairing, and wine service.

  • Strong focus on guest experience and satisfaction, with the ability to interact with a diverse clientele.

  • High level of professionalism, including appearance, demeanor, and work ethic.

  • Ability to adapt to different situations, guest preferences, and operational challenges.
