Job Description
The Meat Science Laboratory Technician, under general supervision, oversees the processing of beef, pork, and lamb carcasses and maintains the sanitation of the Meat Laboratory.
Responsibilities:-Reviews and maintains accurate records for Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS).-Conducts and supervises the harvest of cattle, swine, and sheep.-Conducts and supervises the processing of beef, pork, and lamb carcasses.-Conducts and supervises the sale of beef, lamb, and pork products.-Assists with meat science research projects and laboratories.-Orders supplies and equipment used in the performance of maintaining the laboratory and processing meat products.-Assists with short courses, public exhibitions, and other activities associated with the Meat Laboratory.
-Other duties as required.
Required Education and Experience:-High school diploma or equivalent combination of education and experience.-Five years of related experience in the meat industry.
Required Knowledge, Skills and Abilities:-Knowledge of Hazard Analysis and Critical Control Points (HACCP) and Food Safety and Inspection Service (FSIS) procedures.-Ability to multitask and work cooperatively with others.
-Ability to harvest and process beef, lamb, and pork.
