Responsibilities NONAPPROPRIATED FUND POSITION DESCRIPTION JOB TITLE: Executive Chef BUSINESS TITLE: Executive Pastry Chef FLSA: Exempt JOB SERIES: 1101 PAY LEVEL: NF-04 SUMMARY OF DUTIES: Responsible for the economic and efficient operation of the assigned facility as well as the production in multiple satellite outlets. Implements higher level directives, formulates procedures to ensure high standards of products and services. Establishes, reviews, and evaluates menu planning, food preparation, purchase of supplies, equipment, and materials. Participates with Food & Hospitality Director in establishing financial goals commensurate with market analysis of area. Plans, organizes work, and manages internal resources to ensure maximum productivity and economies. Prepares financial plan, budget, inventories, cost controls, and related records and reports. Reviews the financial status of the assigned activity and recommends changes considered necessary. Either directly or indirectly through subordinate supervisors, manages activity employees. Trains, schedules work, appraises performance, counsels assigned personnel, and recommends personnel actions. Effectively supports the Marine Corps Equal Employment Opportunity policy, and ensures compliance with fire, safety, security, sanitation, and other environmental issues. Manages new property resources and provides advice on renovations and improvements. Must be alert to alcohol abuse and take appropriate action. Maintains and enforces security for MCCS funds, merchandise, supplies, equipment, and property to preclude or minimize the potential for fraud, waste, and abuse. Prepares, develops and/or supervises the production of a wide variety goods such with primary focus on European & American style pastries, cakes, and cookies (macrons, ganache, etc.), following traditional and modern recipes for your assigned facility and other operations within the Food & Beverage program. Creates new and exciting desserts to renew our menus and engage the interest of customers. Decorates pastries using different icings, toppings etc. as to ensure the presentation will be beautiful and exciting. Monitor stock of baking ingredients such as flour, sugar etc. and submit appropriate orders. Checks quality of material and condition of equipment and devices used for cooking. Guides and motivates pastry assistants and bakers to ensure proficiency. Identify staffing needs and help recruit and train personnel. Maintains a lean and orderly cooking station and adhere to health and safety standards. Maintains a complete knowledge of correct use of equipment; uses equipment and tools only as intended, properly and safely. Assist with receiving orders and rotation of raw ingredients and stock. Supervise and advise team members to ensure the adherence to recipes in accordance with departmental standards. Develops and maintains a production schedule and par stock levels. Informs the Food and Beverage Director of any foreseeable shortages before items run out. Maintains proper storage procedures as specified by Health Department. Establishes priority items for the day. Checks quality of material and condition of equipment and devices used for cooking. Minimizes waste and maintain a clean and sanitary work environment. Provides World Class Customer Service with an emphasis on courtesy. Assists customers and communicates positively in a friendly manner. Takes action to solve problems quickly. Alerts the higher-level supervisor, or proper point of contact for help when problems arise. Ensures the facility follows all MCCS directives concerning cash handling, security, and safety. Adheres to safety regulations and standards. Promptly reports any observed workplace hazards, and any injury, occupational illness, and/or property damage resulting from workplace mishaps to the immediate supervisor. Adheres to established standards of actively supporting the principles of the EEO program and prevention of sexual harassment. This is a mixed position where the incumbent must be able to lift and carry objects up to 45lbs independently. Performs other related duties as assigned. Requirements Conditions of Employment See Duties and Qualifications EVALUATIONS: Qualifications QUALIFICATION REQUIREMENTS: Must have 5 years supervisory experience in the production of baked goods, pastries and/or confections following traditional and modern techniques. Five years as an executive pastry chef or chef in charge of production of baked goods, pastry and/or confection. Experience must be within the past ten years. Certification as CEPC (Certified Executive Pastry Chef) is highly desired. Must be able to accommodate a flexible work schedule to include nights, weekends, and holidays. Ability to provide leadership and depth of knowledge to a diverse management and hourly staff; provide direction for training, guidance, development, and supervision. Previous experience in a private club, resort, or luxury hotel preferred. Extensive fiscal management experience to include developing and managing budgets, P&L, fiscal analysis, and utilization of data to make effective business decisions and strong knowledge in standard costing for food operations. Skilled in plated desserts as well as banquet presentation. Strong interpersonal, verbal, and written communication skills, including ability to communicate effectively with the military community, employees, and executive management. Highly developed organizational skills, including ability to manage multiple and often conflicting priorities, meet deadlines and proactively address operational needs. Strong computer skills in Microsoft Programs to include Word, Excel, PowerPoint, etc. to present a variety of statistical data and reports. This activity is a Drug-free workplace.
