PM Sous-Chef

Capital City Club -Brookhaven's Culinary Department is looking to hire an enthusiastic, self-motivated, and team-focused individual for a Full-time Sous Chef position. Position includes full-time hours, health vision, life, dental insurance, 401(k) with a company match, hot meal, and uniforms.

The ideal individual is creative, well organized, works with cleanliness and sanitation procedures, and excels in a  team environment.  The operation is considered high volume with different styles of culinary operations available.  This sous-chef will be operating our fine dining restaurant. The ideal candidate would have 3+ years working in a fine dining establishment who understands the flow of service.

Job Requirements:

  • Proven success as a Sous Chef or Kitchen Manager in a high-volume upscale restaurant or high-end resort restaurant

  • Strong passion for culinary excellence, wine knowledge, and service

  • Proven ability to work in and develop a team

  • Knowledge of systems, habits, and processes that contribute to great execution

  • Stable job history which demonstrates upward career progression

    Additional Responsibilities:

  • Manages food production for the dining room, including menu planning and personnel supervision

  • Assists with production of daily specials

  • Assists in the hiring, training, and ongoing supervision of all employees involved with the dining room food production

  • Establishes and maintains professional standards of conduct and appearance at all times

  • Assists / relieves the Assistant Executive Chef whenever needed

  • Establishes and adheres to food cost goals for the dining room; takes corrective action as necessary to help assure that financial goals are attained

  • Performs other special, ad-hoc duties as requested by the Assistant Executive Chef

  • Reports all members complaints to the Assistant Executive Chef and assists in resolving a complaint

  • Assists in food procurement, delivery, storage, rotation of food purchases

  • Consults with the front of house personnel and management about specials and concerns

  • Meet all health department standards for safe food handling

  • Submits ideas for future goals, operational improvements, and personnel management to the Assistant Executive Chef

    Requirements:

  • Minimum of three years of experience cooking in an upscale dining establishment.

  • Availability and transportation to work flexible schedule either AM or PM (95% of work will be PM) on average of 45 hours per week (overtime paid after 40 hours)

  • Possess strong interpersonal and organizational skills.

  • Ability to walk, stand and/or bend continuously to perform essential job functions.

  • Ability to lift 50+ lbs.

  • Ability to work under pressure and deal with stressful situations during busy periods.

    Reports to: Assistant Executive Chef
